Imagine growing up and having a mom that is the most amazing cook in the family. Then, imagine your sister also being an amazing cook as well. Let me tell ya, that is the story of my life and I have struggled to not burn literally everything that I make since the day that I was born. My mom would make dinner almost every night growing up, while working a full time job and they would be such great dinners. I honestly don’t know how she does it.
Fast forward and I am on my own now, I have to think of ways like many other adults my age and college students that are affordable and easy to get dinner ready. Pinterest has been my best friend in the whole process of teaching myself how to make great dinners at an affordable price, because lets be honest, who has the time and budget for all that anymore?
I have found a couple great recipes that have been super helpful in teaching me along the process of cooking these last few years. All of these meals are so yummy and you can enjoy them as often as you like! Here are 4 easy and affordable dinner meals.

1. SHRIMP TACOS – Easy and Affordable Dinner Meals
Shrimp Tacos are my go-to. They are literally one of the simplest things to make and who honestly doesn’t love a taco? If you don’t like shrimp, replace with chicken or beef. This takes very little time and is so affordable for you and your family!

2. CHICKEN AND BROCCOLI ALFREDO STUFFED SHELLS
Its all about the simplicity and ease of making dinner. You have to take the kids to soccer practice, your husband needs this/that. It is hard to get everything done and have time for yourself! I know by the end of the night I am exhausted and in no way do I want to make a large dinner that takes forever. Stuffed shells is so easy and so delicious.

3. Chicken Burrito Bowls
Throw those ingredients in the crockpot and go about your day! When fall time rolls in, the crockpots come out and it makes it so easy. Invite some friends over for some Saturday or Sunday football and enjoy a chicken burrito bowl. These are also perfect to pack for lunch during the week.

Its 2020 and it feels like a lot of us are trying to focus on improving our health and lifestyle, which is awesome. Some of our favorites don’t have to be completely replaced. Just find a health substitute to some of your favorites and it may really improve some health benefits!

5. Cajun Chicken Pasta
This one-pot meal is your quick remedy when the need for a rich, cheesy pasta hits, but you still have to add some protein and veggies to the table. Chicken, bell peppers, and green onions make this a full, comforting, little grown-up dinner all at the same time. Are you a huge pasta lover?!
